Code 128 or Code 39?

Code 128 is denser and reads small labels better. Code 39 suits simple uppercase tags and older scanners.

How are EAN check digits handled?

Type just the base digits and the tool appends the verified digit. A full code with a wrong digit is flagged before printing.
